My Favorite Breakfasts

Breakfast is my favorite meal of the day. I could eat breakfast food for all three meals and be perfectly happy. Here are some of the things I have eaten on a regular basis during my journey. If anyone ever asks me if I feel deprived or too restricted, I think I will refer them to this blog post. Pancakes, waffles, and oatmeal! Does it look like I am missing out?

Waffles and Pancakes

Say What? I can have waffles and pancakes on @weightwatchers? Yes, you can. I learned that with some modifications and portion control not only can I have these but I can have them regularly. I use Kodiak Cakes mix which is protein packed and delicious. It is 5sp for 1/2 cup of mix. I top with a variety of yumminess including strawberries, bananas, peanut butter, pecans, mini chocolate chips, fat free Reddi Whip, and sugar free syrup. For a lower 3 point option, I use Mudhustler's recipe that is 1/4 cup of Kodiak mix, 3 tbsp egg whites, 2/3 cup of water and 1 scoop of Quest protein powder (flavor of you choice). I adjust the water as needed for both waffles and pancakes to get the batter consistency I want.

Eggs and Veggies

If several years ago you would have told me that I would eat spinach for breakfast, I would have thought you had lost your mind. I have always liked spinach but in dip, not for breakfast. Well, that has changed since being on @weightwatchers. I LOVE having spinach, mushrooms, tomatoes and butternut squash with my eggs. Butternut squash is a fairly new vegetable for me. I don't know why I waited so long to try it because it is delicious! I also like yellow squash and zucchini in an omelette. I like making breakfast skillets, bowls and "pizzas". I top with whatever veggies I have on hand. Sometimes I top with cheese but if I don't, I no longer miss having it. Bottom line is to be creative and don't be afraid to try new things. You may be surprised and decide you love it.

Oatmeal

There isn't much better than having a nice warm bowl of oatmeal on a cool Fall or Winter day. I buy a big container of Millville Quick Oats from Aldi. I dress up my oatmeal with similar topping like I use on waffles and pancakes. I like to use a drizzle of sugar free maple syrup too. Occasionally, I add a bit of Stevia or Splenda but I find that having fruit or the SF syrup, the oats are plenty sweet.

Recently, I have also been buying Better Oats packets. They come in different flavors and are delicious. My favorite is cinnamon roll.
