Breakfast Bake

I was searching for healthier breakfast casseroles and could not exactly find what I wanted so I experimented and came up with this one. We like it and my husband has asked that I start adding this to my meal prep rotation so that he can have something to quickly put in his breakfast tacos on work days. I think this is the ultimate compliment.
