Cornbread Waffles

Years ago on Weight Watchers I found a low point cornbread recipe using self rising cornmeal, egg whites and canned creamed corn. Now that eggs and whole kernel corn are 0 points on Freestyle, I decided to switch things up and experiment with a new recipe. Creamed corn is not 0sp so making this change helped with point value. This is not a sweet corn bread but my taste tester (aka husband), likes this version. I think it turned out yummy and is perfect to use with left over chili or along side your favorite soup. As pictured, this meal is 7 smart points. 4sp for the cornbread waffle, 2sp for 1/2 cup of chili and 1sp for 1 tbsp of reduced fat cheese.
